Paleo, Gluten Free Mini Donuts Recipe

The bite size pieces of joy we refer to as donuts typically come with a heavy fat, sugar and carb price tag. Let alone, they are far from accessible to those following either a gluten free or paleo diet. Here is a baked version of the treats that allows all of us to indulge in the fun!

Ingredients

  • 1 cup Almond Flour
  • 2 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1/4 cup Stevia
  • 1/4 cup Coconut Oil
  • 2 eggs
  • 1/4 cup Almond Milk

*Optional if you aren't dairy free: 1/2 Scoop Vanilla Protein Powder 

“Sugar Coating”

  • 1/3 cup Stevia
  • 1 tsp Cinnamon
  • Coconut Oil

Directions

    • Preheat oven to 350*
    • Grease a donut pan
    • In a bowl mix together the dry ingredients; almond flour, baking powder, cinnamon and stevia
    • In another bowl whisk together the wet ingredients; coconut oil, eggs and almond milk
    • Pour the wet ingredients into the bowl with the dry ingredients and mix well
    • Evenly distribute the mixture into the donut pan
    • Place the tray in the oven and bake for 25-30 minutes or until the donuts turn a golden brown
    • Allow the pan to cool completely before removing the donuts
    • Brush the donuts with coconut oil and dip into the stevia and cinnamon mixture to create the sugar coating effect
