The bite size pieces of joy we refer to as donuts typically come with a heavy fat, sugar and carb price tag. Let alone, they are far from accessible to those following either a gluten free or paleo diet. Here is a baked version of the treats that allows all of us to indulge in the fun!
Ingredients
- 1 cup Almond Flour
- 2 tsp Baking Powder
- 2 tsp Cinnamon
- 1/4 cup Stevia
- 1/4 cup Coconut Oil
- 2 eggs
- 1/4 cup Almond Milk
*Optional if you aren't dairy free: 1/2 Scoop Vanilla Protein Powder
“Sugar Coating”
- 1/3 cup Stevia
- 1 tsp Cinnamon
- Coconut Oil
Directions
- Preheat oven to 350*
- Grease a donut pan
- In a bowl mix together the dry ingredients; almond flour, baking powder, cinnamon and stevia
- In another bowl whisk together the wet ingredients; coconut oil, eggs and almond milk
- Pour the wet ingredients into the bowl with the dry ingredients and mix well
- Evenly distribute the mixture into the donut pan
- Place the tray in the oven and bake for 25-30 minutes or until the donuts turn a golden brown
- Allow the pan to cool completely before removing the donuts
- Brush the donuts with coconut oil and dip into the stevia and cinnamon mixture to create the sugar coating effect
