The sweet cool flavor of peppermint paired with the gooey rich goodness of a chocolate brownie is a favorite holiday combination. Ingredients
1 can black beans, drained and rinsed (about 230g after drained)
½ cup (60g) unsweetened cocoa powder
½ cup (120g) granular sweetener*
Pinch of salt
2 whole eggs
¼ cup (56g) coconut oil, melted

3 scoops (51g) Cellucor COR-Performance Whey, chocolate
â…“ cup unsweetened almond milk (or preferred milk)
¼ cup (50g) candy canes
3 tbsp (45g) semi-sweet chocolate chips
3 tbsp (45g) semi-sweet chocolate chips
1 tbsp (14g) coconut oil
2 tbsp crushed candy canes
Chocolate Topping
Directions
Preheat the oven to 350F. Drain and rinse black beans. Rinse well! Add black beans, cocoa powder, sweetener, salt, and eggs to the food processor (this can also be done in a blender, but food processor is preferred). Process until smooth.
Add coconut oil and protein powder. Process again until a smooth batter is formed. Add candy canes and chocolate chips. Pulse a few times until mixed in.
Pour brownie batter into a 5x9 loaf dish or pan. Bake at 350F for 23-25 minutes. If using a larger 8x8 square baking pan, bake for 15-20 minutes as they will be thinner and cook quicker.
Once baked, let completely cool. You can place it in the freezer to speed this up. While cooling, add coconut oil and chocolate chips to a small microwave safe bowl. Microwave for 60 seconds then mix until smooth.
Spread melted chocolate over top of the cooled brownies. Sprinkle the top with crushed candy canes. Chill again to allow chocolate on top to cool and harden. Once cooled, cut into 10 brownies and enjoy!
