Apple Pie Protein Pancakes

Craving apple pie? Try this gluten-free, sugar-free pancake option! 


Pancakes (2 servings):

Apple Pie Topping:

  • 2 apples peeled and diced
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/4 cup water
  • 1 tbsp maple syrup 


Apple Pie Topping:

In a small sauce pan, add the apples, spices, and water. Allow the mix to reach a simmer, stirring occasionally to ensure apples do not stick to the bottom of the pan. Add more water if necessary.


  • Add all dry ingredients to a bowl (coconut flour, Cellucor COR-Performance protein powder).
  • In a small bowl, add eggs, peanut butter, and water, then mix.
  • Slowly add the wet ingredients into the dry ingredients, and mix.
  • Heat a non-stick pan on medium high, pour batter into skillet making 3” round pancakes. Allow the surface to bubble before flipping.
  • Plate the pancakes and top with the apple pie filling, enjoy!
