Craving apple pie? Try this gluten-free, sugar-free pancake option!
Ingredients:
Pancakes (2 servings):
- 1/2 cup coconut flour
- 2 whole eggs
- 2 scoops Cellucor Whey Isolate Vanilla
- 1/4 cup water (as needed)
- 2 tbsp peanut butter
Apple Pie Topping:
- 2 apples peeled and diced
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ground cloves
- 1/4 cup water
- 1 tbsp maple syrup
Directions:
Apple Pie Topping:
In a small sauce pan, add the apples, spices, and water. Allow the mix to reach a simmer, stirring occasionally to ensure apples do not stick to the bottom of the pan. Add more water if necessary.
Pancakes:
- Add all dry ingredients to a bowl (coconut flour, Cellucor COR-Performance protein powder).
- In a small bowl, add eggs, peanut butter, and water, then mix.
- Slowly add the wet ingredients into the dry ingredients, and mix.
- Heat a non-stick pan on medium high, pour batter into skillet making 3” round pancakes. Allow the surface to bubble before flipping.
- Plate the pancakes and top with the apple pie filling, enjoy!
